This Turkey Pineapple Stir Fry is scrumptious and mouthwatering with bites of juicy sweet pineapple to balance out the savory vegetables. Healthy and light this is a great meal any time and it is also a fantastic way to help use some of that leftover holiday turkey.

Ingredients
2tsp.Seasme oil
1CupOnions
1CupCarrots
1Zucchini
½Red pepper
1 ½CupsTurkeycooked
1Can Pineapple Chunks20 oz
2TbsSoy Sauce
Instructions
Heat a frying pan over medium heat. Pour the sesame oil into the pan. Chop the onions and add to the pan. Cook for about 5 minutes, stirring often.
Coarsely chop the carrots and zucchini. Put in the pan and cook for another 5 minutes, stirring frequently.
Cut up the red pepper. Chop and remove any skin or bones from about 1 ½ cups of cooked turkey.
Drain the juice from the pineapple and save to drink or use in a different recipe.
Incorporate the pepper, zucchini, turkey and pineapple.
Sprinkle the soy sauce over everything. Stirring often, cook for about 7 or 8 more minutes or until all the vegetables are tender.
