Turkey Pineapple Stir Fry


This Turkey Pineapple Stir Fry is scrumptious and mouthwatering with bites of juicy sweet pineapple to balance out the savory vegetables. Healthy and light this is a great meal any time and it is also a fantastic way to help use some of that leftover holiday turkey.

  • 2 tsp. Seasme oil
  • 1 Cup Onions
  • 1 Cup Carrots
  • 1 Zucchini
  • ½ Red pepper
  • 1 ½ Cups Turkey cooked
  • 1 Can Pineapple Chunks 20 oz
  • 2 Tbs Soy Sauce


  • Heat a frying pan over medium heat. Pour the sesame oil into the pan. Chop the onions and add to the pan. Cook for about 5 minutes, stirring often.
  • Coarsely chop the carrots and zucchini. Put in the pan and cook for another 5 minutes, stirring frequently.
  • Cut up the red pepper. Chop and remove any skin or bones from about 1 ½ cups of cooked turkey.
  • Drain the juice from the pineapple and save to drink or use in a different recipe.
  • Incorporate the pepper, zucchini, turkey and pineapple.
  • Sprinkle the soy sauce over everything. Stirring often, cook for about 7 or 8 more minutes or until all the vegetables are tender.
  • Serve with rice or noodles, as desired.
