Broccoli Red Pepper Salad


Did somebody say crunchy, savory healthy broccoli red pepper salad? Yes, please! This is one of my favorite nutritious and delicious summer salads. I love the way the crisp broccoli, sweet red peppers, and mild onion meld together with the light balsamic dressing.

  • 4 cups broccoli florets
  • 1 cup sliced red peppers
  • ¼ cup red onion
  • 3 Tb. Balsamic Vinegar
  • 1 ½ Tb. Honey
  • 1 ½ T. Olive Oil
  • ½ tsp. Salt
  • ¼ tsp. Black pepper


  • Slice through stems of broccoli then pull apart into bit sized pieces.
  • Slice red pepper into thin slices then cut into thirds. Half a red pepper cut is equal to about one cup.
  • Thinly slice red onion and then cut slices in half. Please the broccoli, red pepper and onion in a mixing bowl.
  • In a small bowl whisk together vinegar, honey, olive oil and salt and pepper. Mix until all the honey is dissolved and everything is well mixed.
  • Pour over the broccoli mixture and mix together until all the vegetables are evenly coated.
