Did somebody say crunchy, savory healthy broccoli red pepper salad? Yes, please! This is one of my favorite nutritious and delicious summer salads. I love the way the crisp broccoli, sweet red peppers, and mild onion meld together with the light balsamic dressing.

1cupsliced red peppers
1 ½T.Olive Oil
Slice through stems of broccoli then pull apart into bit sized pieces.
Slice red pepper into thin slices then cut into thirds. Half a red pepper cut is equal to about one cup.
Thinly slice red onion and then cut slices in half. Please the broccoli, red pepper and onion in a mixing bowl.
In a small bowl whisk together vinegar, honey, olive oil and salt and pepper. Mix until all the honey is dissolved and everything is well mixed.
Pour over the broccoli mixture and mix together until all the vegetables are evenly coated.
