This Skillet Vegetables en Mole starts with my rich delicious homemade Mole Sauce. Then generously cover vegetables with the sauce and simmer. It is a very easy and simple recipe once you have already made your mole sauce.

I have never tried mole from a restaurant or store. I can only imagine that after trying homemade mole you will never want to buy canned mole sauce again. After I started making this homemade version there was no going back. This sauce is the real deal.
You can easily substitute different types of vegetables depending on your own preferences or what you have in your fridge. I really love the sweetness and texture of the sweet potato combined with the slightly spicy flavor of the sauce.
These vegetables en mole are warm and smokey but not too spicy. It smells so heavenly while you are cooking it you will probably make all your neighbors jealous. When done cooking the vegetables should be tender and ready to eat.
Serve with your favorite rice or quinoa. Drizzle some of the extra mole sauce from the bottom of the skillet dish on your rice or quinoa to make it even more delicious. Add a green salad and some crusty bread for a complete meal.
Ingredients

For this recipe you will need
- Olive Oil
- 1 Sweet potato
- 1 Red pepper
- 1 Zucchini
- 1 Cup Cauliflower floretts
- 1 Can Garbanzo beans
- 1 ½ Cups Mole Sauce
- Salt
- Pepper
- Cooked rice or quinoa for serving
Here is the recipe for the homemade mole sauce. It will take about and hour and a half to prepare because it needs a little time to simmer. It is completely worth the time though!
Substitutions
You can absolutely substitute different vegetables other than the ones that I have used. You could also try green beans, onions, peas, carrots, celery, potato, corn, turnips, or squash.
Changing the types of vegetables may affect the cooking time. Make sure to simmer until vegetables are tender and cooked completely.
Directions

To make this Vegetables En Mole just heat a skillet over medium heat then add oil. Peel your sweet potato, chop into large chunks and add to pan. Cook for 3-4 minuted stirring frequently. Add cauliflower florets and cook for another 3-4 minutes.
Cut red pepper in half, remove seeds and slice into pieces. Remove the ends of your zucchini and chop into pieces. Incorporate both into the pan, season with salt and pepper. Cook for about 2 more minutes, stirring frequently.
Drain and rinse garbanzo beans then add to the pan.

Cover with the mole sauce. Reduce to a low simmer. Cover and cook for about 20 minutes stirring occasionally. The flavor of the sauce will develop more as it cooks.
Serve with your favorite rice or quinoa.

Ingredients
- 2 Tb Olive Oil
- 1 Sweet potato
