Did somebody say crunchy, savory, healthy broccoli red pepper salad? Yes, please! This is one of my favorite nutritious and delicious summer salads. I love the way the crisp broccoli, sweet red peppers, and mild onion meld together with the light balsamic dressing.
This broccoli red pepper salad is hearty and nourishing. Red peppers are a great source of vitamin C, vitamin A and folate. Broccoli, being the superfood that it is, is high in fiber, a great source of vitamins K and C, as well as folate and potassium. Red onions are also packed with vitamins and may help ward off cancer and boost your immune system.

So basically this salad is packed to healthy foods that help form and heal body tissue and bones. The powerful antioxidants help protect from damaging free radicals. The high fiber and the compounds in the onions also help promote good digestion and gut health.
This salad is so colorful it really brightens up any table. It is also very easy to make. It actually only takes about ten minutes to bring together, at the most.
I call it a summer salad but I have to confess that I make this year round because it is so good. It is also great for picnics or easily rounds out a quick weeknight meal.
I actually really like to serve it with backyard grilled hamburgers because the flavors and textures compliment one another. It also replaces a green salad, in that case, since we are already having lettuce on the burgers.
Ingredients

One thing that I love about this salad is how perfectly simple and healthful the ingredients are. Many items are probably already in your pantry. You will need:
- Broccoli
- Red pepper
- Red onion
- Balsamic Vinegar
- Honey
- Olive Oil
- Salt
- Black pepper
Storing leftovers
This salad is best when eaten fresh or within 4 to 6 hours of first making. You can store leftovers in an airtight container in the fridge for up to 3 days. After the first few days the vegetables will begin to loose their crispness.
Directions
To make my Broccoli Red Pepper salad you just slice through stems of your broccoli then pull apart into bit sized floret pieces. Slice half a red pepper into thin slices then cut the slices into thirds. This will equal to about one cup.

Next, thinly slice red onion and then cut the slices in half. Please your broccoli, red pepper and onion into a mixing bowl. Lastly, in a small bowl whisk together vinegar, honey, olive oil and salt and pepper. Mix it until all the honey is dissolved and everything is well mixed.
Pour over the broccoli mixture and mix until the vegetables are evenly coated.

Ingredients
- 4 cups broccoli florets
- 1 cup sliced red peppers
- ¼ cup red onion
- 3 Tb. Balsamic Vinegar
- 1 ½ Tb. Honey
- 1 ½ T. Olive Oil
- ½ tsp. Salt
- ¼ tsp. Black pepper
Instructions

Great broccoli salad recipe. I took this salad to a neighbor's outdoor bbq gathering and it was a hit. I will make it again next time. Healthy and easy too.
